Pecorino Cacio "Fiorello"
This cheese is made from organic raw “Sopravvissana” sheep milk, Goat Yoghurt, sea salt and rennet and aged 2 to 4 months.
Made by our cheesemaker Viyoral (Fiorello in Italian) at La Porta dei Parchi, this wonderful full flavored cheese is an intense combination of the Sopravvissana sheep milk and a touch of goat milk yogurt. This compination of flavors; sweet sheep milk and the tartness and acidity of the goats milk, conbines with some nice mold from the aging room.
