ricotta al fumo ginepro (juniper-smoked ricotta)
One of my all-time favorite cheeses. I originally enjoyed this grated over pasta at Agriturismo Valle Scannese, in Abruzzo, more than a decade ago. What a joy to be able to enjoy it here in the U.S. as well. Creamy, lightly tangy, with smoky notes, it really does conjure the mountains of Abruzzo.
