Aged 60-90 days, made from organic raw goats milk, salt and rennet.

This rare Italian goat cheese is made in the Sagittario Valley area of Abruzzo. The "caprino," is made and aged in the baskets (called "fuscelle") and is slightly dry and lightly salted. It has a mellow goat flavor and a hint of spice in the finish.

Exceptional quality; the same I encountered in Anversa. Ripe, smooth, tangy, with a hint of mountain air..... perfect with an aged Montepulciano
