Manteca Caciocavallo Podolico – Butter-Filled Aged Cheese from Abruzzo
A cheese within a cheese. Manteca is a mini version of our prized Caciocavallo Podolico, filled with fresh butter and aged for 3–6 months—a true delicacy of the Pasta Filata (stretched curd) tradition.
Made from the sweet, herbaceous milk of the rare nomadic Podolico cow, the curd is stretched by hand and wrapped around a core of fresh Podolico butter, then tied, hung, and aged. As the outer shell matures, the inner butter remains soft, creating a beautiful contrast of textures and flavors.
