Our funkiest cheese! Pecorino Muffato di Anversa, or “Sheep’s Blue,” is a cave-aged, blue-veined pecorino made from raw Sopravvissana sheep milk. Aged 3–4 months and gently pierced to encourage blueing, it’s tangy, creamy, and a little spicy, with bold flavor and a natural earthiness from the cave aging process.
Using traditional techniques and Penicillium roqueforti, this cheese is handcrafted in small batches and aged in our family’s Abruzzo caves to develop a balanced blue character that’s both approachable and complex.
