Crafted from the milk whey of our family’s Sopravvissana sheep, this organic aged ricotta is a rare treasure of the Abruzzo mountains. Our Ricotta Passita begins with fresh sheep’s milk ricotta, basket-aged for one month before maturing for 3 to 9 months in natural mountain caves. During this time, it develops a firm, dense texture, a bold aroma, and a distinctive dark rind shaped by native cave flora.
Seasoned with wild herbs like thyme, rosemary, and peperoncino, the cheese’s herbed exterior enhances its rich, earthy character. Inside, the flavor is full-bodied and savory, a perfect reflection of the wildflower meadows and high-altitude pastures of Abruzzo where our sheep graze.
