First crafted high in the Abruzzo mountains by the legendary late Gregorio Rotolo, Pecorino Gregoriano is a rare, small-batch sheep’s milk cheese with a creamy, soft texture and gentle tang. Made from raw Sopravvissana milk and aged just over 3 months, it captures the wild, herbal notes of the Marsicani Mountain pastures.
Supple and richly flavorful, this soft pecorino is almost impossible to find outside Italy. Its subtle acidity and grassy finish make it perfect for pairing with sunflower honey or serving as a unique addition to a cheese board.
