Pecorino Cacio "Fiorello"

Abruzzo Pecorino with Goat Yoghurt. Aged for 2 to 4 months. Made from organic raw “Sopravvissana” sheep milk, Goat Yoghurt, sea salt and rennet.

Made by our cheesemaker Viyoral (Fiorello in Italian) at La Porta dei Parchi. This wonderful full flavored cheese is an intense combination of the Sopravvissana sheep milk and a touch of goat milk yogurt. This compination of flavors; sweet sheep milk and the tartness and acidity of the goats milk, combines with some nice mold from the aging room.
